2-3tbswater(or more depending on how thick you want it to be – as a vegetable or salad dressing you may want it a little runnier than if you are serving it as a sauce or dip but it is all a matter of personal taste).
1crushed garlic clove(If you are serving Tahini sauce with a fish dish, you may want to leave out the crushed garlic to avoid overpowering the subtle taste of the fish.)

Instructions
In a small bowl mix 4 tablespoons of tahini paste with the lemon juice. It will start to thicken.
Gradually add the water till you have the consistency of thick honey. (Add a little more water if you are using it as a sauce on poultry, fish or vegetables. SEE RECIPE NOTES BELOW)
For a salad dressing use 2 tbsp tahini paste, juice of half a lemon, and start with 2 tbs water. Salt to taste.If the dressing is too lemony add a little olive oil.
