It is with great pride that Egyptian’s claim that unlike many Middle Eastern dishes, Koshari is not derivative of Ottoman cuisine and that no other Arab country has a version of it. The dish is served with an aromatic and tangy tomato sauce that is quite delicious.
The sauce can be used to flavor vegetable side dishes or firm white fish like this Grilled Swordfish With Koshari Salsa.
Koshari Tomato Sauce

Ingredients
- 4 large garlic cloves, minced
- 1 tsp ground coriander
- ¼ tsp ground cumin
- A pinch cayenne pepper
- ½ cup canned tomato sauce (you can freeze the rest in a zip lock bag)
- ¼ cup water
- 4 tbsp distilled white vinegar (I also made the sauce with red wine vinegar. It works but is less tangy).
- Salt to taste
Instructions
- Add 2 Tbs oil to the pan and on a medium to low heat, cook the minced garlic, ground cumin and ground coriander for a minute to release the flavors.
- Add 1/4 a cup of tomato sauce and 1/4 cup of water and simmer on medium heat for 10 minutes.
- Stir in 4 tbs white vinegar and simmer for about 5 minutes to thicken and cook off the acidity.

There is also a “salsa” version of the sauce that requires no cooking which I use over filets of fish. See recipe.

Yeah, simmering for 7 minutes is absolutely not enough time to cook tomato sauce. And the picture does not look like 7 minutes, but more like 30…

Eva, Thanks for you feedback and I am sorry it did not work out for you. All my recipe are tested before publishing and if you cook the sauce for longer than 7-10 minutes you will lose the flavor of the vinegar.

can I use Apple cider vinegar instead of white vinegar ?

Cider vinegar will give you a milder and sweeter sauce and should work.
