Za’atar has a definite thyme flavor with overtones of nutty sesame seeds, the aromas of coriander and cumin seeds laced with lemony sumac. You can make the mix yourself but with so many good Middle Eastern food stores around these days a store bought brand will save you the time.
Dress grilled zucchini or any other vegetable with it.
If you wish to make your own mixture here is the basic recipe. Feel free to change the proportions to suite your taste.
Grilled Zucchini With Za’atar Dressing

Equipment
- grill pan or skillet
Ingredients
- 1 tbsp dried thyme
- 1 tbsp ground cumin
- 1 tbsp grouind coriander
- 1 tbsp toasted sesame seeds
- 1 tsp sumac
- ½ tsp aleppo pepper - optional
- 2 zuchinis
Instructions
- Mix all the ingredients together in a small bowl. Store in an airtight container.
- Slice the zuchinis 1/4 inch thick lengthwise
- Grill for 2 minutes each side
- Sprinkle with za'atar mix
