This delicious recipe uses the traditional Mediteranean ingredients of olive oil, garlic, fresh oregano, lemon thyme, rosemary and white wine or lemon slices to flavor a delicate tasting poaching broth for salmon filets.
Ready in thirty minutes, it is the perfect midweek dinner treat.
Mediterranean Poached Salmon

Equipment
- 10" Frying pan with cover
Ingredients
- ½ large yellow onion, thinly sliced
- A handful of fresh rosemary
- 3-4 Sprigs of fresh oregano
- 1 tbsp fresh lemon thyme leaves
- 1 cup water
- ½ cup dry white wine ( or slices of half a lemon with 1/2 cup of water).
- 1 clove garlic thinly sliced
- 1 lb salmon filets
- salt to taste
Instructions
- Bring water to a simmer and add onions, garlic and herbs. Simmer for 10 minutes to flavor the broth.
- Add half a cup of white wine and add filets.
- Simmer filets on a very low heat for about 10-12 minutes.
- Salt to taste and serve on a bed of the cooked onions and garnish with herbs.
