This spicy tomato dressing is delicious with steamed or roasted sprouts or broccoli.
Using the coarse side of a box grater, grate three or four ripe tomatoes (any type will do) and set aside. In a small frying pan heat 3 tbs olive oil over moderate heat and gentle sauté two or three finely chopped garlic cloves for a minute or so until the oil is infused with garlic flavor. Add 3tbs red wine vinegar and reduce for a couple of minutes. Add grated tomato pulp and salt and pepper to taste. .
