Dried cumin seeds and a light tomato sauce transfer a humble cauliflower into a treat.
Cauliflower is one of those maligned vegetables, often considered, along with cabbage, as smelly and well, not really tasty.
With a little thought you can turn it into quite a delicious entrée and here is one that is an Egyptian family favorite. You get a wonderful combination of creamy cauliflower and the crunch of cumin seeds enveloped in a rich tomato sauce that works as a healthy main course with rice or as a side dish.
What you need
A large yellow onion coarsely chopped
3 garlic cloves, finely chopped
2 Tbs olive oil
A 12oz can of diced tomatoes
1 Tbs tomato paste
1/2 cup of water
Florets of a small to medium cauliflower
A whole dried red pepper (optional)
Salt to taste
2 Tsp dried cumin seeds divided
What to do
Sauté onion and garlic on low heat for 3-5 minutes till soft.
Add tomatoes, water and tomato paste and simmer for 10 minutes to blend.
Add cauliflower florets, 1 Tsp cumin seeds and simmer for 15-20 minutes.
Salt to taste and plate.
Sprinkle with remaining cumin seeds.
