Braised chicken thighs served with a Sicilian sweet and sour sauce.

The Chinese have their own sweet and sour sauce, the French have aigre doux and the Sicilians reputedly introduced agro (sour) dolce ( pronounced dolché as in sauté that means sweet to the rest of Italy and the world.

There are many variations to an agrodolce recipe but they all fall under two fundamental categories. A balsamic vinegar based condiment for fish, poultry or meat and here is a recipe for salmon with an agrodolce granish.

The other category is a red wine vinegar based recipe that blends with other ingredients on a stove top to cook poultry in a sweet and sour sauce. This recipe is a good example and the combination of red wine vinegar, golden raisins and mild green olives  gives you a light dish full of intricate flavors.

Pairs well with polenta or orzo.
